Cooking is a science. How does the powder from a bag of gelatin form into a solid mass simply by adding liquid to it? How does yeast work? And why do you always have to cut steak against the grain? The answer to these questions can be found when we look at them from a molecular level. Science cooking is also a profession in its own right. Cooking scientifically involves a lot of innovation and knowledge. From haute cuisine to inside your own kitchen.
